If you want to make a great burger you need to start with a great hamburger patty recipe. That includes picking out the best meat and forming it into the perfect patty. Once you’ve got the basic seasoned patty recipe down you’ll be ready to try mixing it up with other ingredients and spices.
How to Make Burger Patties
So you’ve got the perfect meat picked out and it’s time to make some patties. To start off you’ll want to add just a little extra flavor into the meat. For each patty mix in:
- 1 Tsp Salt
- 1/4 Tsp Pepper
You can estimate this once you’re used to the measurements, basically a good amount of salt and a little pepper. Mix that into the meat instead of seasoning later where you’ll only get some of the meat properly flavored. In future recipes you might try adding more spices or diced veggies (onions, jalapeños, etc).
Now, when forming the patty you’ll want to make sure not to handle the meat too much. Over-handling makes the meat mealy and dense. Just get the spices in there, make a ball with the amount of meat you want to use and use both hands to get it into a disk shape.
Here are some tips for the perfect burger patty:
- If you use too much meat, it’s going to be much tougher to cook well so ideally go with either about 6oz (roughly 1/3 lb) or 8oz (1/2 lb) of meat.
- To fit the the bun make the disc about 1/2 inch larger than the bun, the burgers should shrink up to fit nicely.
- After you’ve made the patty, put a thumbprint in the middle of it (about 1/3rd of the thickness of the burger). This keeps it from puffing up in the middle into a ball-burger.
